Cooper’s Union

New in Hoboken, NJ: Cooper’s Union bar / restaurant

Taking place of the doomed McCarthy’s Pub – is Cooper’s Union (same owner as Qdoba on Washington St.)

After a friends & family test run last week, they should be opening up today (or at the very least this week). The new owner says his bar will be different than the previous one, because they’re really going to focus on quality food on the menu. No major modifications to the interior of the establishment have been made.

In case you were wondering – the name “Cooper’s Union” was inspired by what a Cooper is – which is a person who makes those barrels that beer and wine are often stored in.

I stopped in last night, Paddy did a great job with the place, much much better than that disaster McCarthy’s. Nice big tables, the space is just used much better than just a huge empty room with a bar way in the back. If anyone can keep that place going, it’s Paddy.
