Vitos Lotsa Pasta set up on Sinatra Drive downtown

Vito’s Lotsa Pasta is now open for business!

Today (and for the time being) they’re set up on Sinatra Drive between First and Second Streets. They expect to be there until 7pm tonight.

Vito’s has a variety of different pastas to choose from, along with gluten-free and whole wheat. All dishes are custom made-to-order, which is ideal for the freshest tasting pasta. If you like over-cooked wedding buffet-style pasta, this place is not for you! They do it right at Vito’s!

I chose the penne with vodka sauce and grilled chicken, and a side of garlic bread. Absolutely fantastic! The penne was cooked to perfection, and the chicken was very tender. I’m still smacking my lips as I write this. I’ll probably order this dish again, and ask for a side of extra sauce to dip the garlic bread in.

July 4th Sneak Preview of Vitos Lotsa Pasta

FYI – for those excited to try Vito’s Lotsa Pasta truck before they make their official debut in about a week – bring your hungry souls over to 11th and Hudson, where they’re selling $5 promotional bowls of pasta. You can try rigatoni w/ meat sauce, penne with vodka sauce or bowtie pasta in a garlic-infused marinara sauce. Cold beverages are also available for $1.00. They’ll be there until about midnight tonight!

Latest Hoboken Food Truck: Vitos Lotsa Pasta

Coming soon to the Mile Square: Vito’s Lotsa Pasta mobile food truck!

Owned and operated by two guys well known in the community – Vito Gigante and Nicky Burke – Vito’s Lotsa Pasta hopes to bring classic Italian dishes to the masses in Hoboken.

The truck should be rolling in the next week or so – but for a sneak preview, head on down to the Movies Under the Stars at Pier A Park tomorrow night at around 8pm, as Vito will be on hand giving out 500 free samples of the dishes they’ll be serving, with sauces like vodka, bolognese, authentic marinara and more. Additional varieties to be added in the coming months.

    vito and burke….now they’re……..seriously all the best with the endeavor….havings sampled some of these dump trucks, food trucks, at least i know these two can cook….and wont rip people off….

    I had the same exact dish as Hoboken411 and it was really VERY VERY good, reasonably priced also. It takes a bit longer than you would hope but that is b/c it is made fresh. It was VERY good. I will be all over it whenever they come up to 14th Street!

    Just had some penne pasta and shrimp fra diavolo from the truck. A bit too hot and three small shrimp.The garlic bread which was a French Bread smeared with some kind of raw garlic and oil was not too appetizing. I can get better from the dozens of pizza italian places in town. You need to step up your game if you are serving Italian in this burg, this ain’t the sticks where mediocre Italian is the norm.

    I think these trucks are Great for Hoboken. I give them alot of credit. Vito’s Lotsa Pasta is Banging! The neighborhood smells of Galic and Oil ! The food is Great and the Guys on the Truck are Very Helpful! Cant go wrong. My wife had the Penne Chicken ala Vodka Sauce. Fabulous! And we will be at the gym downstairs first thing in the morning. I LOVED the Rigatonni with Meat Sauce. Mangia!!! Burp. lol

    Wow! Wat more can I say about Vito’s Lotsa Pasta. I’ve been personally training for 3 yrs & like so many others stayed away from eating carbs especially pasta. I have to honestly say I was drawn to Vito’s Lotsa Pasta when I heard they were serving Gluten free & Whole wheat Pasta so I had to give it a try. I ordered the Gluten free Penne with Grilled Shrimp, mixed vegetables & Pesto sauce to top it off. Although I waited around 10 minutes which was totally understandable being that it was so freshly made and absolutley Amazing!!!! Now for certain no feelin guilty here. Bravo!!!!!!! You GOTTA give it a try :)
