I don’t understand why some of the restaurants don’t do true wine pairings. Get a three-course menu and do a flight of three wines (with short pours) to pair with each course. They can charge a premium and still have a happy customer that will learn a bit about pairing wine with food.

This must be a great job. I wish there were more wine parties or tastings in the mile square city. Hoboken is slowly becoming a new boutique like town. Events with wine will really draw people to Hoboken
